
Distilling has a long and distinguished history in Scotland. The earliest documented record of distillation dates back to 1494. This historic event was recorded in the tax records of the day. This entry states “Eight bolls of malt to Friar John Cor wherewith to make aqua vitae” (Latin for water of life). This amount was sufficient to produce almost 1,500 bottles.

Originally scotch was clear and frequently flavored with fruit and herbs. Consumption was generally very soon after distillation, or presumably as long as the maker could wait. However, once the use of oak casks, which produced smoother and more flavorful whisky, was commonplace, aging became an important step in the production of uisge beatha –(Scottish for water of life). Finally, in the 1920’s, a three year, oak cask aging on Scottish soil became a mandatory requirement for whisky producers. Traditionally, whiskies made in Scotland are spelled with the “e.” Building on this historic base, two styles of Scotch whisky have evolved. Blended Scotches, which are a combination of 50 to 80 percent grain (unmalted) whisky and 20 to 50 percent malt whisky.
